Plantains
The plantains shown above are flowering.
Edible parts:
Leaves: Leaves from plantains that have already started flowering are quite stringy, so pick them in spring through late summer from plants that are young and have no stems.
Seeds: The seeds of a plantain are quite tricky to collect, but if you can get enough you can make plantain flour and use it as a substitute for wheat flour in cupcakes and muffins. More after I test this myself!
